Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the cheesecake:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup heavy cream
2 ripe bananas, mashed
1/2 cup sweetened condensed milk
1/2 cup powdered sugar

Crushed vanilla wafer cookies, for garnish

Instructions:
Step 1: Prepare the Crust
Preheat the oven to 325°F (160°C).
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon to compact it down.
Bake the crust for 10-12 minutes, or until lightly golden. Remove from the oven and allow it to cool while you prepare the cheesecake filling.
Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
Add the granulated sugar and vanilla extract, and continue to beat until the mixture is well combined.
Add the eggs, one at a time, beating well after each addition.
Pour in the heavy cream, mashed bananas, and sweetened condensed milk, and beat until smooth. Add the powdered sugar and mix until incorporated.
Step 3: Bake the Cheesecake
Pour the cheesecake filling over the cooled crust, smoothing it out with a spatula.
Place the springform pan on a baking sheet and bake in the preheated oven for 45-50 minutes or until the center is set but slightly jiggly.
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
After an hour, transfer the cheesecake to the fridge to chill for at least 4 hours or overnight for the best results.
Step 4: Garnish and Serve
Before serving, top the cheesecake with a generous amount of whipped cream, banana slices, and crushed vanilla wafer cookies.
