Crispy Corn Fritters

Instructions:

In a large bowl, combine the corn, chives, and jalapeno pepper.

In another bowl, whisk together the eggs, flour, baking powder, cayenne pepper, cornmeal, sugar, salt, and milk until smooth.

Pour the egg mixture over the corn mixture and stir until well combined.

Heat the vegetable oil in a large skillet over medium heat.

Using a large spoon or cookie scoop, drop spoonfuls of the corn mixture into the hot oil, flattening each fritter slightly with the back of the spoon.

Fry the fritters until golden brown, about 2-3 minutes per side.

Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serve the fritters warm with your favorite dipping sauce.
