Directions:
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they are pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant.
- Add the white wine to the skillet and bring to a simmer, scraping the bottom of the skillet to release any browned bits.
- Stir in the heavy cream and bring the mixture to a simmer. Cook for 2-3 minutes, or until the sauce thickens slightly.
- Stir in the Parmesan cheese and Mozzarella cheese until the cheese is melted and the sauce is smooth.
- Add the cooked pasta, cooked shrimp, and spinach leaves to the skillet and toss to coat with the sauce. Cook for 1-2 minutes, or until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve the pasta in bowls, and garnish with chopped parsley.
