CCheesy Cajun Garlic Chicken Rotini Skillet

Ingredients
For the Chicken & Seasoning
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
- 2 tbsp Cajun seasoning (mild if desired)
- 1 tsp garlic powder
- ½ tsp onion powder
- 2 tbsp olive oil
For the Cheesy Garlic Sauce & Pasta
- 12 oz rotini pasta
- 1 tbsp butter
- 4 cloves garlic, minced
- ½ cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Optional: extra cheese for topping
Instructions
1️⃣ Cook the Pasta
Bring a large pot of salted water to a boil.
Cook rotini according to package instructions until al dente.
Drain and set aside.
2️⃣ Season the Chicken
Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
3️⃣ Sear the Chicken
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook 6–7 minutes until golden and cooked through.
Remove and set aside.
4️⃣ Make the Cheesy Garlic Sauce
In the same skillet, melt butter.
Sauté garlic for 1 minute until fragrant.
Add chicken broth and heavy cream; simmer gently.
Stir in mozzarella, cheddar, and Parmesan until smooth and creamy.
5️⃣ Combine and Serve
Return chicken to skillet.
Add drained rotini and toss to coat in sauce.
Simmer 2–3 minutes to thicken.
Garnish with fresh parsley and extra cheese if desired.
Serve hot.
