Ingredients
- 2 (8-ounce) containers candied cherries
- 1 (8-ounce) container candied mixed citrus peel
- 2 cups raisins
- 1 cup dried currants
- 1 cup dates, pitted and chopped
- 2 (2.25-ounce) packages blanched slivered almonds
- 1 cup apple juice
- ½ cup all-purpose flour
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup butter
- 2 cups packed brown sugar
- 6 eggs
- ¾ cup molasses
Instructions
1. Prepare the Fruit Mixture
In a medium bowl, combine the candied cherries, citrus peel, raisins, currants, chopped dates, and almonds.
Pour in the apple juice and mix well. Let the mixture sit for about 2 hours so the fruit absorbs the moisture and flavor.
Lightly coat the soaked fruit with ½ cup flour to help keep it evenly distributed in the cake batter.
2. Preheat the Oven
Preheat your oven to 275°F (135°C).
Grease an 8x8x3-inch cake pan, line it with parchment paper, and grease again to prevent sticking.
3. Mix the Dry Ingredients
In a small bowl, whisk together:
- 2 cups flour
- baking soda
- cloves
- allspice
- cinnamon
- salt
Set aside.
4. Prepare the Batter
In a large mixing bowl, beat the butter until smooth and creamy. Gradually add the brown sugar and continue mixing until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, combine the molasses and apple juice, then slowly mix this liquid into the butter mixture.
Alternate adding the dry ingredients and the liquid mixture, mixing gently until everything is combined.
Fold the prepared fruit mixture into the batter.
5. Bake the Cake
Pour the batter into the prepared cake pan and smooth the top.
Bake for 3 to 3½ hours, or until a toothpick inserted in the center comes out clean.
6. Cool and Store
Allow the cake to cool completely before removing it from the pan.
Wrap the cake in wax paper or parchment paper and store it in an airtight container.
The flavor continues to improve after a day or two as the spices and fruits blend together.
Tips for the Best Fruit Cake
- Use high-quality dried fruits for the best flavor.
- Coat the fruit with flour before mixing to prevent it from sinking.
- Bake slowly at a low temperature to keep the cake moist.
