Long John Silver’s Copycat Fish Batter Recipe
Ingredients
2 cups all-purpose flour
1/4 cup corn starch
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon onion salt
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
16 ounces club soda
2 pounds cod or other white fish, sliced into 3-ounce pieces
8 cups vegetable oil for frying
Instructions
Prepare the Oil:
Heat vegetable oil in a deep fryer or heavy pot to 350°F.
Use a thermometer to ensure accurate temperature.
Make the Batter:
In a large mixing bowl, combine all dry ingredients (flour, corn starch, sugar, salt, baking powder, baking soda, onion salt, paprika, and black pepper).
Immediately before frying, slowly add club soda while stirring.
Mix until just combined, leaving some small lumps in the batter.
Prepare the Fish:
Pat fish dry with paper towels.
Cut into 3-ounce pieces.
Frying:
Dip fish pieces into the batter, coating thoroughly.
Let excess batter drip off.
Carefully lower battered fish into hot oil.
Fry for 2-3 minutes until golden brown.
Turn fish halfway through cooking if needed.
Drain and Serve:
Remove fish with a spider or fryer basket.
Place on a wire rack to drain excess oil.
