Instructions:
- Preheat the oven to 350°F. Grease and flour a 9×5 inch loaf pan.
- In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, and mix until well combined. Stir in the vanilla extract and mashed bananas.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
This cake is best served warm, and can be stored in an airtight container for up to 4 days. You can also freeze it for up to 2 months. You can also add chocolate chips, nuts or any other ingredients of your preference to make it even more delicious!
