1 pound ground beef
1 small onion, finely chopped
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
8 large flour tortillas
2 cups shredded cheddar cheese (or a blend of your choice)
1 cup shredded lettuce
1 large tomato, diced
1/4 cup pickles, chopped
1/4 cup ketchup
1/4 cup mustard
1/4 cup mayonnaise (optional)
2 tablespoons butter

Directions

Prepare the Ground Beef: Preheat your Blackstone griddle to medium-high heat. Add the ground beef and chopped onion to the griddle. Cook, breaking up the meat with a spatula, until the beef is browned and the onions are tender. Season with garlic powder, onion powder, salt, and pepper.
Assemble the Quesadillas: Lay out the flour tortillas on a clean surface. Spread a thin layer of ketchup and mustard on half of each tortilla. Evenly distribute the cooked ground beef mixture over the ketchup and mustard. Sprinkle a generous amount of shredded cheese on top of the beef.
