
Instructions:

- Gradually add the flour mixture to the egg mixture, beating until just combined.
- Stir in the grated carrots, coconut, and raisins.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden brown.
- In a medium bowl, whisk together the powdered sugar and vanilla.
- Dip the cookies in the powdered sugar mixture, and place them on a wire rack to cool.
