Carrot Cake Cookies

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, beat the eggs, butter, and cream cheese until creamy.
  3. Add the brown sugar, granulated sugar, and beat until well combined.
  4. In another bowl, whisk together the flour, oats, cinnamon, baking powder, baking soda, and salt.
  5. Gradually add the flour mixture to the egg mixture, beating until just combined.
  6. Stir in the grated carrots, coconut, and raisins.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden brown.
  9. In a medium bowl, whisk together the powdered sugar and vanilla.
  10. Dip the cookies in the powdered sugar mixture, and place them on a wire rack to cool.
  11. Serve and enjoy!
