Coconut Cloud Cake – A Fluffy, Creamy Paradise in Every Bite!


  • 2 1/2 cups all-purpose flour

  • 1 cup sweetened shredded coconut, toasted or fresh

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, and line the bottoms with parchment paper for easy removal.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3–4 minutes. This creates the foundation of a soft, tender cake.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla and coconut extracts.
Gradually add the dry ingredients in three parts, alternating with the coconut milk. Begin and end with the dry ingredients, mixing just until combined.

Divide the cake batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and continue beating until fully combined and creamy.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until combined. Stir in the vanilla and coconut extracts for that extra layer of flavor.

Place one cooled cake layer on a serving plate. Spread a generous layer of frosting on top of the first layer.
Place the second cake layer on top and frost the entire cake, including the sides. This will create a smooth and creamy texture for your Coconut Cloud Cake.

Press the sweetened shredded coconut onto the sides and top of the cake to create that signature “cloud” look. If you’re using fresh coconut, lightly toast it to bring out its flavor and give the cake a golden, crunchy texture.
