Ingredients (Serves 4–6):
- 2 lbs boneless, skinless chicken breasts, diced
- 12 oz rotini or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1½ cups shredded Pepper Jack cheese
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Step-by-Step Instructions:
1️⃣ Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken, onion, garlic, Italian seasoning, salt, and pepper.
- Cook 5–7 minutes until golden and cooked through.
2️⃣ Cook the Pasta:
- Bring a pot of salted water to a boil.
- Cook pasta al dente according to package instructions. Drain and set aside.
3️⃣ Make the Creamy Sauce:
- Pour in chicken broth and heavy cream, bring to gentle simmer.
- Stir in Pepper Jack and Parmesan cheese until melted and smooth.
4️⃣ Combine & Finish:
- Add cooked pasta to the sauce and toss to coat evenly.
5️⃣ Garnish & Serve:
- Sprinkle with fresh parsley. Serve warm.
