- 1 pound ground beef
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 zucchini, cut into half-moons
- 1 cup cherry tomatoes, halved
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes (optional, for a spicy kick!)
Instructions:
1. Sauté the Aromatics (Time: 3 minutes)
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onions and garlic. Sauté for 2–3 minutes until the onions become soft and fragrant.
2. Cook the Ground Beef (Time: 5–7 minutes)
Add the ground beef to the skillet, breaking it apart with a spoon. Cook for 5–7 minutes, until the beef is browned and fully cooked. Drain any excess fat if needed.
3. Add the Vegetables & Spices (Time: 5 minutes)
Stir in the red bell pepper, zucchini, and cherry tomatoes. Season with salt, black pepper, smoked paprika, cumin, oregano, and red pepper flakes (if using). Stir well to combine and let the vegetables cook for 3–5 minutes until they start to soften but still have a little crunch.
