Instructions
Step 1: Prepare the Pan and Meat
- Spray a springform, round cake pan, or casserole dish with cooking spray.
- Brown the ground beef and onion in a skillet; drain excess fat.
- Add taco seasoning and cook according to package directions.
Step 2: Assemble the Layers
- First layer: Place 1 tortilla at the bottom of the pan. Spread 1/3 of the beans on it, then 1/3 of the meat, and sprinkle some cheese.
- Second layer: Add a tortilla, then ½ the rice, ½ the salsa, ½ the corn, and cheese.
- Third layer: Add a tortilla, then 1/3 of beans, 1/3 of meat, and cheese.
- Fourth layer: Add a tortilla, then layer remaining beans, meat, corn, rice, salsa, and top with cheese.
Step 3: Bake
- Cover with foil and bake at 350°F (175°C) for about 40 minutes.
- Remove foil and bake 10–15 minutes longer until the cheese is bubbly and golden.
- Let the casserole sit for 5 minutes before slicing.
