Mexican Tortilla Casserole


Instructions

Step 1: Prepare the Pan and Meat

  1. Spray a springform, round cake pan, or casserole dish with cooking spray.
  2. Brown the ground beef and onion in a skillet; drain excess fat.
  3. Add taco seasoning and cook according to package directions.

Step 2: Assemble the Layers

  1. First layer: Place 1 tortilla at the bottom of the pan. Spread 1/3 of the beans on it, then 1/3 of the meat, and sprinkle some cheese.
  2. Second layer: Add a tortilla, then ½ the rice, ½ the salsa, ½ the corn, and cheese.
  3. Third layer: Add a tortilla, then 1/3 of beans, 1/3 of meat, and cheese.
  4. Fourth layer: Add a tortilla, then layer remaining beans, meat, corn, rice, salsa, and top with cheese.

Step 3: Bake

  1. Cover with foil and bake at 350°F (175°C) for about 40 minutes.
  2. Remove foil and bake 10–15 minutes longer until the cheese is bubbly and golden.
  3. Let the casserole sit for 5 minutes before slicing.
