Orange Pineapple Cake

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch (23×33 cm) baking pan.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, until fully incorporated.
  4. Stir in the vanilla extract, orange juice, and crushed pineapple.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Serve the cake as is or with a dollop of whipped cream on top.
