Directions:

Cut a pocket into the side of each chicken breast and stuff evenly with the ricotta mixture. Secure with toothpicks if necessary.
Heat olive oil in a large oven-proof skillet over medium-high heat. Add the chicken and sear until golden, about 3-4 minutes per side.
Pour the chicken broth into the skillet around the chicken breasts.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
Let the chicken rest for a few minutes before serving.
