Apple Crisp Cheesecake Pie

Snacks:

  • 2 1/4 cups Graham cracker crumbs

Dairy:

  • 1 tbsp Butter, melted
  • 10 tbsp Butter, unsalted, room temperature
  • 12 oz Cream cheese, room temperature

Liquids:

  • 1/2 cup Water

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium-sized mixing bowl, toss the diced apples with lemon juice. Set aside.
  3. In a separate mixing bowl, combine the graham cracker crumbs, 1/2 cup of sugar, 1/4 cup of brown sugar, 1 tsp of cinnamon, and 1 tbsp of melted butter. Press the mixture into the bottom of a 9-inch pie dish.
  4. In a separate large mixing bowl, beat the cream cheese until smooth. Add the remaining 1/2 cup of brown sugar, 1 1/2 tsp of vanilla extract, and the egg, and beat until well combined. Stir in the flour and corn starch.
  5. Pour the cream cheese mixture into the prepared crust. Top with the apple mixture.
  6. In a small mixing bowl, combine the oats, 1/4 cup of sugar, 1 tsp of cinnamon, and 1/2 tsp of nutmeg. Cut in the remaining 10 tbsp of unsalted butter until the mixture is crumbly. Sprinkle the oat mixture over the apples.
  7. Bake the pie for 45-50 minutes, or until the filling is set and the crust is golden brown.
  8. Allow the pie to cool completely before serving. Serve with a drizzle of caramel sauce over the top. It’s perfect for fall and holiday season, it’s sure to be a hit with family and friends.
