
Instructions:
Preheat oven to 400°F (200°C).
In a large skillet, heat olive oil over medium-high heat. Add sliced beef, season with salt and pepper, and cook for about 3-4 minutes or until browned. Remove beef from skillet and set aside.
Add sliced bell pepper and onion to the same skillet and cook for about 3-4 minutes or until tender.
Place a tortilla on a baking sheet. Layer shredded cheese on one half of the tortilla, then add cooked beef, bell peppers, and onions. Top with more shredded cheese.
Fold the tortilla in half, pressing down gently.
Melt butter in a skillet over medium heat. Add the folded tortilla and cook for about 2-3 minutes on each side, or until cheese is melted and tortilla is golden brown.
Remove the quesadilla from the skillet and let it cool for a minute or two before slicing into wedges.
Repeat the process with the remaining tortillas and ingredients.
Serve hot and enjoy!
