Pistachio Cake

Frosting:

  • 1/2 cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk
  • 1/2 cup chopped pistachios for decoration

Instructions:

  1. Preheat the oven to 350 degrees F and grease a 9-inch round cake pan.
  2. In a medium mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, cream the butter and sugar until light and fluffy. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add in the dry ingredients, alternating with the milk. Stir in the chopped pistachios.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before frosting.
  7. To make the frosting, beat the butter in a large mixing bowl until creamy. Gradually add in the powdered sugar and vanilla extract. Mix in the milk, 1 tablespoon at a time, until the desired consistency is reached.
  8. Spread the frosting over the cooled cake and sprinkle with chopped pistachios.
  9. Serve and enjoy!
