- 1/2 cup unsalted butter, room temperature
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tbsp milk
- 1/2 cup chopped pistachios for decoration
- Preheat the oven to 350 degrees F and grease a 9-inch round cake pan.
- In a medium mixing bowl, combine the flour, baking powder, baking soda, and salt.
- In a separate mixing bowl, cream the butter and sugar until light and fluffy. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add in the dry ingredients, alternating with the milk. Stir in the chopped pistachios.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- To make the frosting, beat the butter in a large mixing bowl until creamy. Gradually add in the powdered sugar and vanilla extract. Mix in the milk, 1 tablespoon at a time, until the desired consistency is reached.
- Spread the frosting over the cooled cake and sprinkle with chopped pistachios.
- Serve and enjoy!
